Christmas is over, but that doesn't mean that there are no more holiday activities to engage in on your days off. Take a break from playing with your new toys and go outside. We were able to spend our Friday night doing something we hadn't done for a while. Going to the zoo.The Oregon Zoo in Portland holds their Zoolights event between Thanksgiving and New Year's Eve. They decorate the zoo with millions of lights. You'll see animals, but only lit up ones, as most of the real animals are asleep for the night. This is a super popular event in the Portland area. The lines were long when we arrived, but they were crazy by the time we were leaving. Weekends are the busiest and also the days leading up to Christmas, so going before the end of the year is perfect and a good way to spend quality time out with your family before school and work starts again.

With a zoo membership, you can get into this event for free. We happened to be in the right place at the right time and some wonderful people saved us $24 by handing us their two extra member tickets that they couldn't use, so this activity ended up being even cheaper. We spent a total of $9 once we made it in and that was on hot chocolates and treats. Even though it was rainy, we still had a good time and got some fun photos.

I often talk to people who haven’t taken a real vacation in a long time. Between their bills and children, they feel like money is always an issue and their small budget won’t allow them to travel anywhere far from home. Traveling doesn’t have to be a burden, and with the stress of everyday life weighing down on you, a trip may be just the thing to re-energize you and bring your family closer together. You don’t have to spend a fortune to still have a great time. In fact, I spend my time researching ways to spend less, while still doing more on every trip I take. Here are just some of the ways to save when traveling with your family.Travel in the off-season or during winter break. If you have smaller children, you have the luxury of traveling all year long. With this in mind, avoid traveling in the summer. Summer is easily the busiest and most expensive time to plan a vacation. If a beach or other warm-weather location is your destination of choice, plan a trip in the spring. Springtime is always less crowded and one of the best times to find sales on both airfare and hotel rates. If your children are in school, wait until Christmas break to make your journey. If you fly on Christmas Day, you can get rock-bottom airfare, since most travelers want to be at their destination by that day and it’s one of the lightest travel days of the year.Trade in the ocean for the lake. If you are longing for a beach getaway, you can do many of the same activities at a lakeside destination as you can oceanfront, but with the upside of vast savings off your vacation total. You can still build sandcastles, go boating, snorkeling, diving, fishing, parasailing and more, but at a lower cost.Rent an apartment, condo or house. When you travel with your whole family, even if it’s just four of you, a hotel room can feel claustrophobic. Hotels rarely offer more than just one room and an attached bathroom, so if you’re planning to be in your room for more than just sleeping and changing clothes, nobody has any personal space. Check sites like HomeAway and FlipKey to reserve a vacation rental for your stay. Not only will you have more room to spread out, but you’ll also save money over a bigger hotel room and have a kitchen, where you can make some of your own meals reduce your dining budget.Avoid ordering off the kids’ menu. When you go out to eat, almost all restaurants have the dreaded kids’ menu that usually has the same five food items to choose from. Sometimes your kids are just not going to be happy with anything but chicken nuggets, but for the rest of the time you’re out, you can be more frugal and get your children to try new foods (and eat some vegetables!) by splitting an entree with them or between children. They will have options that are more nutritious than pizza and hot dogs and if they don’t finish what’s on their plate, you haven’t wasted money on a separate dish.Use your zoo membership. Almost every family I know has invested in a zoo membership, because for one price, they can go to the zoo and aquarium all year long. This helps when money is tight and they have to get out of the house, and I don’t know any kid that doesn’t love fish and other animals. If you have a membership, you can use it to visit other zoos and aquariums across the country and, in some cases, in other parts of the world. It can be fun for kids to feel like the day is totally about them and they can learn about new animals in different parts of the world that your zoo might not have.Traveling with kids can give you a whole different view of your vacation destination and cause you to be more creative in planning and traveling around each day. Children can be great world travelers, if given a chance, and it’s a wonderful opportunity for them to learn about new cultures, food and countries.

Are you and your family ready for a vacation? Looking for ways to cut your expenses, so a trip will fit into your budget? No problem! Traveling with kids can be spendy, but if you know how to plan ahead and what you can do to make it more affordable, it can be a stress-free and relaxing experience. Everyone needs some time away and a good vacation can be an awesome bonding experience for your family. Following are five ways to save on your big trip.
Purchase a City Pass. Many cities worldwide offer what is called a city pass. You pay one price for a pass that includes many different activities and attractions and it enables you to bypass the ticket lines and go straight to the front gate. Not only does this cut your entertainment costs, it is also very convenient and enables you to do more things on the same budget.
Bring snacks and games. While this may not save you much money, unless your children are always complaining that they’re hungry, it can keep them entertained between activities. If you’re waiting in line or taking a break from walking, having a small snack you can dig out of your day bag or a game to play for a few minutes can alleviate boredom and keep kids happy when nothing’s going on. I find that games are a fantastic way to pass time on the airplane and snacks can save you money on the airline food menu.

Buy souvenirs ahead of time. If an amusement park is your final destination, chances are your kids are going to want shirts and toys and anything else they see for sale. These items can add up quickly and bust your budget. Many theme parks, like Disney, have a lot of surrounding stores with discounted items. Local grocery stores, Target and special souvenir shops can be a lifesaver. Purchase many items for the price of one and then either dole them out before you head out to the parks or secretly pack them in your day bag to give to children throughout the day when they start to get cranky or having a case of the “I wants”.


Pack light. I know that with kids it’s hard to do this, but it’s not impossible. Each of your children can bring their own carry-on for the plane and help spread around the weight. Whether it’s a small rolling bag that can fit under the seat or a backpack they can wear, they can share the load. While their clothes can be fairly lightweight, everything they want to take from home may not be. Pack as much of their clothes as you can in your own carry-on (Spacebags or Pack-It cubes may help) and then have them carry any spillover and a few things from home in their own bag. This may be a few (or a combination of) small toys, a coloring book and some snacks. Anything that will make traveling less of a chore. If there is more than one adult in your party, this may be done more easily, and you will have everything with you when you land, saving you checked baggage fees and time waiting for your bags on the carousel.Rent baby equipment at your destination. This doesn’t sound money-saving at all, but it can be. Dragging around a stroller and other cumbersome products can be hard, cost you checked baggage fees and may even damage your own items in the process. Sites like BabiesTravelLite have lists for worldwide locations that rent baby equipment from strollers to baby baths. These places often rent equipment for an entire week for less than you would pay to rent them for a day at amusement parks and other places. You can pick them up on your way to your hotel or vacation rental and then drop them off on your way to the airport. You don’t have to juggle extra things at the airport and you won’t have to worry about damage to any of your own gear.

It might take a little extra effort and planning to travel with children, but it can be very rewarding in the end. It’s possible to save on many parts of your trip, making it just as affordable as before having kids when you didn’t worry (as much) about your budget. Your destinations are as open as ever and kids can only add to the fun of a new place with their excitement over things you may have long forgotten were exciting. So, pack your bags, stick to your budget and have a great time!

We're bring you some holiday cheer with some cocktails from different places.

Mexican Hot Chocolate:In a sauce pan simmer 2 cups of milk, 1oz. unsweetened Chocolate, 2tbs. of brown sugar, pinch of salt, pinch of red chili flakes, 1/4 of a vanilla bean (scraped out) and cinnamon. I like to scrape right off a cinnamon stalk to taste.
After you simmer, add 2 tbs of Godiva Dark and White Chocolate Liqueur(each), Dark Rum (Meyers), and Goldschlager (Cinnamon Schnapps...also the gold flakes add a nice touch)
Pour into cup, add Whipped Cream, drizzle some chocolate or caramel over top and stick in 1/2 a cinnamon stick.***To make this for kids or people who are driving....skip the BOOZE!***----------------------------Candy Cane Martini:First crush up a bunch of cany canes into an almost powder form (small chunks are OK but no bigger than a sequin)Rim a martini glass with simple syrup and roll rim in crushed candy cane (just like salting a rim for a Margarita)
In a Mixing Tin combine 3oz. of Vanilla Vodka and 1oz. of Pepermint Schnapps.
Shake and pour into Martini glass.--------------------------Chocolate Raspberry Martini:First Drizzle some chocolate syrup into a martini glass (do anything be creative....no matter what you do it WILL NOT look bad)
In a Mixing Tin combine 3/4oz. Godiva Dark Chocolate Liqueur, 1/2oz. of Chambord (pronounced Schaum-Borg) Black Raspberry Liqueur1/4oz. Baileys Irish Cream, 1/4oz. of Raspberry Vodka and a splash of cream.***can substitute Dark Chocolate with White Chocolate for awesomeness***
Shake and pour into Martini glass, garnish with raspberries or chocolate covered raspberries.--------------------------Rudolph Love Potion:In a Mixing Tin combine 1/2oz Godiva Dark and White Chocolate Liqueur (each), 1/2oz. of Chambord, 1/2oz. of Raspberry Vodka.
Shake and pour over a cocktail ("rocks") glass filed with ice.Gentely pour Cream on top, you will see it float.-------------------------As for some "casual" cocktails:Screwdriver: 1oz. Vodka fill with OJMadras: 1oz. Vodka fill with OJ and CranberryBaybreeze:1oz. Vodka fill with Cranberry and PineappleSex on the Beach: 1/2 oz. Vodka, 1/2oz. Peach Schnapps fill with Cranberry and OjMelon Ball: 1/2oz. Midori, 1/2oz. Vodka fill with OJWatermelon: 1/2oz. Midori, 1/2oz. Vodka fill with CranberryFuzzy Navel: 1oz. Oh my goodness! It's that time of year again.  Time for a soliloquy. I like soliloquy rather than resolution because I reflect before I resolve.

Where have I been?  What have I learned?  What do I want and/or need to change?

Hmmmm, let me think.......

I've been to Egypt, Dubai, Croatia, Sheboygan, South Africa, Aruba, Brazil,  Denmark.

What I've learned along the way?
  • "There is nothing to fear but fear itself." I went hang gliding in Brazil. The experience was liberating and absolutely breathtaking! I will add an adventure to my travels. Stepping out of your comfort zone will renew your confidence and perspective.
  • Sustainability is easier than you think for yourself and your country.  We'd all be better off for it.  In Denmark I visited a hotel that operates mostly on this principle.  From the design and construction of the building to the food.  Solar panels are built in, ground water is used to heat and cool the building, the wasted food, which there is a ton of at hotels, is used as compost in their organic farm, the country has the largest wind turbine plants in the world, 80% of the people bike and there are concessions for electric cars for 10 years! I will be mindful of the footprints I leave behind. I will use my towel more than once. I will use the toiletries until they are gone before getting new ones. I will take a walking tour or rent a bike for my health and the health of the environment.  I might even take a Voluntourism trip.  Might is the operative word. I'm a work in progress.
  • The middle east is just as diverse as any other part of the world.  Egypt is a mix of liberal and conservative Muslims but overall more liberal with ancient structures and history.  No alcohol is served outside of hotels and cruise ships while Dubai, UAE is far more conservative in Islamic practice but far more modern. Basically catering to foreign vacationers and alcohol is served at just about any establishment that caters to foreign visitors. I will not judge on outer appearances or what I've heard.  this is part of getting to know the locals.  You'd be surprised what you might learn about people.  It could confirm your beliefs or change them.
  • Dubrovnik is beautiful and very classic European. I've been pronouncing it wrong.  The emphasis is on Du not Brov. It's DUbrovnik vs. DuBROVnik. It's been just 20 years since Croatia declared it's independence from the former Yugoslavia. And 13 years since Serbia occupied a piece of Croatia. Can't believe it's been that long. Time does fly as you mature.LOL
  • In Aruba everyone is affectionately called mi dushi, Papiamento for my sweet or sweetie.  Call someone Mi Dushi and they will love you for it.  It doesn't seem to matter who you are speaking to.  We came upon a public official and our guide called out to her "hey mi dushi." Pronounced dooshee. Hmmm, should we refer to our politicians as sweetie?
  • South Africa remains one of my favorite destinations.  It's now on the list of emerging markets or as we call them in the industry BRICS (Brazil, Russia, India, China & South Africa).  I came upon a lot of nationals traveling and vacationing within their own country.  That's a great sign. When I revisit a destination, I will try something different, visit a new place, meet new people.
  • Sheboygan was a nice getaway and road trip.  Sometimes you don't have to travel far for a cultural experience.  Yes, I said cultural experience.  Each of our states and cities have their own culture.  Sheboygan is a quiet seaside resort town with a close knit community.  Lake Michigan is really an inland sea! This was my second deep sea fishing adventure but my first catch.  It was a five pound lake salmon.  They smoked it for me and mailed it to me. OK, we did not go out that far but it was far enough.  It wasn't a thirty pound marlin but it was just right for me.
  • I gained 10 pounds last year after working hard to take off 50 pounds two years prior. The good news is that I'm already back on track. That being said, I know the error of my ways during my travels and will not consume every meal as if it's a crucial part of my travels. When I'm just eating for sustenance I will do so mindfully and save the calories for the meals that really are crucial to my travels.
  • I work in the travel industry so this may sound funny to you but I will take a vacation. I haven't had one in at least 4 years. All of my travels have been for work. You may not have sympathy for me but understand that what I do is work.
  • I will engage more with the locals. Maybe even invite someone to coffee just to chat and really learn about the country and the people. It's interesting to hear what people think about their country, your country and the world. Especially what they pay in taxes.
  • I will say hello, please and thank you more and learn it in as many languages as I can. It's fun and the response you get is priceless.

This is what I plan to do for the New Year and beyond. I hope that I make it such a habit that it will forever be a part of what I do.

Pantry Challenge Week 3

Did you have a great holiday with your kids? We did. House cleaning and blogging didn't happen, but we had fun. So Heather had dreams of books I was going to review and various prizes I was going to give away this month, but I was forgetting 'I am a mother of three now'. I never have as much time as I am hoping for. And things always come up. Anywho, moving forward.
 Here was my grocery spending breakdown for last week:

  • Cilantro, a pepper and green onions- $1.90
  • milk- $2.89
  • greek yogurt- $3.59 ( I used it to make tzatziki sauce out of my cucumber. That recipe was a failure.)
  • bread- $2.34
  • ice cream- $2 (It was a prize on the chore chart.)
So that's roughly $13.
 No complaints from my family yet on using the things that we have. Of course the kids just finished the last of the chicken nuggets and I'm not buying anymore before February. We'll see how that goes. I still have a fair amount of fresh produce including a squash that's been in my fridge since before Christmas, so I'm trying to use up those things.

Food Storage Friday: Reuben Pinto Burgers

I found this recipe in the newspaper last Sunday. My burgers don't look as pretty, but they were very tasty, and really that's all that matters. (Ok, they are healthier than a standard burger, and I suppose that matters for something too.) If you are not fan of sauerkraut, you can easily change the toppings to make it whatever burger tickles your fancy.

Reuben Pinto Burgers
Food Storage Ingredients:
2 cans (15.5 oz)  pinto beans, liquid drained, 1 can mashed with a fork
1 can (14.5) sauerkraut, drained
1/4 cup canola oil
1 teaspoon ground pepper
1 teaspoon garlic powder
1/2 cup light mayonaise or Miracle Whip
2 Tablespoons of chili sauce

Fresh Ingredients:
1 & 1/4 cup dry bread crumbs
2 eggs, lightly beaten
6 thin slices Swiss cheese
6 whole wheat hamburger buns

1. Mix beans, bread crumbs, eggs, pepper, and garlic in a bowl. Form into six patties (Roughly 4"). 2.Mix chili sauce and mayo, set aside. 3. Place a slice of cheese on each half bun. Toast at 300 degrees F for about 5 minutes. 4. While toasting buns, heat oil in a large skillet. 5. Cook patties in hot oil until crisp on both sides (8-10 minutes total). 6. Assemble burgers with sauce on each side of bun and sauerkraut on top of patty.

Notes: The recipe I read said to drain and reserve liquid from canned beans, then add it to patty mixture for moisture. I found them to be plenty moist without it. I'll have to try this recipe with cooked dry pinto beans and with various burger toppings. I made my bread crumbs by toasting a couple of smashed freezer burnt Kaiser rolls that I found buried in my freezer and added a dash of Kirkland's organic no-salt seasoning. I highly recommend. I also used Monterrey Jack instead of Swiss, because that is what I had in my fridge. Still good.

  • can of Carnation Instant Breakfast- $3.70 (after coupon)
  • Bountiful Basket (apples, bananas, pears, oranges, cauliflower, broccoli, kiwis, pomegranates, lettuce, corn on the cob)  + bread pack that I split with my mom- $12
Total- $26.36 after tax
Total for the month so far- $79.36

Now I have to admit that I cheated. My family was visiting from out of town and we took them to lunch. Lunch for 5 adults and 2 children came to $59. Not really compatible with the $100 challenge. But I'm not going to be a bad hostess just because I'm doing some crazy pantry challenge. And I did make them eat food storage experiments for their other meals, which actually turned out pretty good. And I never got around to making the BBQ beans because I had too many other leftovers.

*If you live in the Utah county area there is a Stouffer's thrift store near the plant in Springville, UT. Anything that isn't perfect goes to the thrift store. This could mean that they messed up the product, but most often it means that the package is under or overweight. Recently when my mom was there she found frozen Whole Grain Vegetable Lasagnas for $1.99 each, so she brought a few down when she came to visit. They tasted great. Hope that helps someone who is trying to get dinner on the table for less without spending their lives in the kitchen. :)

Book Review: How to Cut Your Grocery Bill in Half with America's Cheapest Family

To give me some ideas to make it through my pantry challenge, I read How to Cut Your Grocery Bill in Half with America's Cheapest Family: So Many Innovative Strategies You Won't Have to Cut Coupons by Steve and Annette Economides. I enjoyed reading it. It has lots of great suggestions, even if sometimes it's a little on the cheesy side. I love that the authors emphasize that your time is at least as valuable as your money. They spend $350 each month feeding their large family, and they don't do it by hitting the loss leaders at 6 grocery stores per week. The strategies that they use work for them because they provide them with more time with their family. And their basic suggestions aren't new or revolutionary, but they do elaborate with lots of examples that have worked for them and other families who read their blog.
  • Have a plan- plan your grocery list, plan your meals, plan your money
  • Look at ads, then coupon and price match 
  • Stock up on good deals
  • Shop once per month
  • Cook once per month & freeze multiple meals
  • Get your family involved
  • Organize your kitchen/pantry/freezer in a way that makes shopping & cooking efficient
  • Learn to cook and eat at home
  • Garden
 That's the basic premise of their book. These down-to-earth ideas are all things that we have heard before, but I think the key that really brings it all together is having a plan. This is true when it comes to most things, whether you're talking about feeding your family, saving for college or running a business. You have to decide that your are going to save money on your groceries and how you are going to do it.
 At the end of every chapter they have suggestions for which ever level you're at. If you're a beginner there are suggestions for you, there are suggestions for those with some experience who are trying to do better and then there are even tips for the experts. In one of the book reviews I read, someone complained that all of the ideas in this book were great if you have a large family, but irrelevant for most people. I have to disagree with that. They have suggestions that work for the young, old and in between. There are ideas that can work if you live by yourself or are part of a family of 12. You just have to pick out the ideas that are relevant to your situation.
  Here are some of my favorite tips from the book:
  • Buy produce in bags, you get more for your money. Produce bags have to be a certain minimum weight, but often weigh more than that and are usually cheaper per pound than loose produce.
  • Share recipes with friends to get new cooking ideas.
  • Put a small plastic basket in your cart where you put all of your "impulse buys". Before you get to the check-out evaluate if you really need any or all of those items.
  • Picky eaters can easily sabotage frugality. Find creative ways to get them to eat what the rest of the family is eating.
